Healthy Nutella

Home made nutella! Everyone who is following me for a while knows this is my absolute number 1 guilty pleasure, or actually, addiction. Nutella should actually belong to my basic needs, I need it to lead a happy life. Okay, maybe I am exaggerating a bit, but it is just so incredibly delicious! Big thanks to the inventor of nutella. Now I always have a big jar of nutella in the house, but I keep that one for my treat day (I try at least).

But…. Now I finally found a healthy replacement that I can use carelessly on the ‘normal’ days. I have to admit it is still high in calories, but counting calories is not what we want right. It is full of healthy nutrients and that is what really counts for your body.

How to prepare:

Preheat oven to 190 degrees. Spread the hazelnuts in a single layer on a baking sheet and roast them until they are fragrant en dark, this takes about 12 to 15 minutes. Stir the nuts halfway through baking. Beware that they do not overcook; they must absolutely not turn black. If you roast skinned hazelnuts, you have to remove the skin after roasting. Therefore let the nuts cool to room temperature. Put them in a bowl and put another bowl on top of it. Shake it well so the skins will come off. Put the hazelnuts without the skin in a food processor and pulse for about 5 minutes until you get a smooth paste. You will need to stir every minute through the paste so the nuts can release the oils and so it will become buttery. Add the cacao, almond milk, vanilla extract, salt and honey and mix it well so it becomes smooth again. The paste has to be soft and shiny. This will take about 2 minutes. The quantities in this recipe are enough for a jar of nutella of 150 grams. If you keep it in the refrigerator it remains definitely one week. Enjoy, enjoy, enjoy!

  • 125 ml almond milk
  • 4 tablespoons honey
  • ½ teaspoon vanilla extract
  • Pinch of salt
