Winter rice porridge
This lovely and nutritious meal is what I like to call comfort food. It’s super easy to prepare! When I’m out of inspiration this is always my go to meal because I always have all the ingredients at home. It gives me a warm feeling and it’s way healthier than the traditional unhealthy rice porridge. So put on your Christmas sweater, ‘All I want for Christmas’ and prepare this meal… It gives you the ultimate Christmas feeling.

How to prepare
Cook the rice in some water according to the instruction on the package. Add the almond milk, ½ teaspoon cinnamon, mixed spice and flaxseeds. Let it rest for 15 minutes. Cut the apple into pieces. Cook the apple pieces with 4 tablespoons water, 1 teaspoon cinnamon, lemon juice and date in pieces. Pour the rice porridge in a bowl and finish off with the apple, date and optional chopped almonds, nutbutter and palm grades.Ingredients
- 50 gr brown rice
- 100 ml unsweetened almond milk
- 1,5 tsp cinnamon
- ½ tsp mixed spice
- ½ tsp flaxseeds
- 1 apple
- 1 date
- Lemonjuice
- Optional: chopped almonds, 1 tbsp nutbutter and 1 tbsp pomegranate
