Stuffed speculaas
Stuffed speculaas is a typical Dutch treat that we especially enjoy during this time of the year when Saint Nicholas is back in town. Most people have this treat on along peppernuts/spice nuts and taai-taai . It’s super yummy and definetely something you should try! Unfortunately this is not really a Slimming Body proof recipe though, lol! But it’s a great own for on your cheatday! So this weekend we all be baking stuffed speculaas, right sweeties? :D
How to prepare
Preheat the oven at 180 degrees. Put the almonds and honey in a food processor. Mix until you get a sticky batter. Not sticky enough? Add 1 tbsp of water. Put the almond-honey batter in the fridge. Split the egg. Mix the yolk, spelt flour, coconut oil, mixed spice and baking powder in a bowl. Mix well. Divide the dough in two. Line a caketin with parchment paper and put one part of the dough in. Pour the almond-honey batter on top. Finish with the second part of the dough. Make sure the layers are pressed together very well. Smear the egg white on top and finish of with the almond flakes. Bake the stuffed speculaas in the oven for about 25 minutes. Let it cool down and put the speculaas in the fridge before you cut it in pieces.Ingredients
- 100 gr almond flour
- 250 gr spelt flour
- 1 egg
- 100 gr honey
- 100 gr melted coconut oil
- 3 tbsp mixed spice
- 1 tsp baking powder
- Hand of almond flakes
