Pink hotchpotch
Thanks to Mandy (@mandycillisen) for this delicious recipe! Yummy in my tummy! Mandy requested a hotchpotch in her comment below this Tuna beetroot spread recipe. Doesn’t this hotchpotch look great with the pink color? I am allowed to like pink as a girl right (guilty)?

How to prepare:
Cook the beetroot and sweet potato for 15 minutes until done. Use a fork to check if they are done. Heat up some olive oil in a frying pan and bake the chicken meatballs until they’re golden brown. You can make the chicken meatballs yourself or buy them at a local food market. When you make them yourself mix ground chicken with Italian herbs, salt and pepper and make little balls. Cut the champignons and add to the meatballs.
Mash the beetroot and sweet potato and season with pepper, salt and garlic.

- 200 gr beetroot
- 100 gr sweet potato
- 100 gr of chicken meatballs
- 100 gr champignons
- 1 glove of garlic
- Pepper and salt
- Italian herbs
