Pumpkin cake
I was enjoying my pumpkin cake so much last time that I made another cake with this orange friend. I can imagine that a cake is not the first thing you think of when you think of pumpkin, but it’s an amazing combination! It’s great as a snack with a big cup of tea. Life is good! :-)

How to prepare:
Cook the pumpkin for 15 minutes till it’s done. Mash the pumpkin together with the banana with a hand blender or in your blender. In a bowl mix the flours, rolled oats and mixed spice. In another bowl mix the pumpkin, banana, egg and water and add to the flour mixture. Mix till you get a batter. Line up a loaf tin with parchment paper and pour the batter in. Top off with almond crumble and pecans.
Bake the pumpkin cake for 45 minutes.
Ingredients (6 portions)
- 200 gr of pumpkin
- 100 gr of amaranth flour
- 50 gr of almond flour
- 100 gr of rolled oats
- 1 egg
- ½ banana
- 1,5 tsp mixed spice
- 150 ml water
Topping
- Almond crumble
- Pecans

70 minutes
