Oreo cookies
Twist, lick and dunk!!! Oreo’s are definitely one of my favorite cookies! Every time it’s the same story: I buy a pack of Oreo’s and make a deal with myself that I can have 1. Okay 2, because having one is just like having none. Then 2 turns into 4… I mean they are packed by 4, that’s not for nothing right? Oh men I want more than 4! I figured it was time to make a healthy version of these sinner cookies. And yes, I’ve done it again ladies! Do you like to dunk your Oreo’s? Take some unsweetened coconut milk or almond milk instead of regular milk… I’m in heaven.

How to prepare:
Soak the cashewnuts in water fora bout 12 hours, or overnight. Preheat the oven on 180°C. Mix flours, oatmeal, cinnamon and raw cacao in a bowl. In another bowl mix water, coconutoil and honey and add this to the flour mixture. Mix until it’s a dough (add 20 ml water if it’s too dry). Roll small balls with your hands. Line up a baking sheet with parchment paper and make little cookies from 3 cm. You can use a round cookie form if you want. Little note: make sure you have an even number of cookies. Place your cookies in the oven for 20 minutes, then flip your cookies and place back in the oven for another 10 minutes. Now you can make the filling. Put the soaked cashewnuts in the foodprocessor and mix until it’s a smooth paste. Add the water and honey and mix again. Time to build your cookie!! Put the cashew filling on one cookie and place another cookie on top. You can make about 8 cookies.Ingredients
- 50 gr of almond flour
- 50 gr of coconut flour
- 100 gr of oatmeal
- 1 tbsp raw cacao
- 50 ml water
- 3 tbsp coconutoil
- 10 steviadrops or 1 tbp of honey
- 1 tbsp cinnamon of cookie spice
- 100 grams of raw cashewnuts
- 1 tbsp of honey
- 50 ml water
