Healthy curry

Nothing beats a good old spicy curry (a healthy version of course). I could eat curry every day and if they are as healthy as this one, I actually can! Yum! You know what I like most about curry? The fact that you can vary as much as you want. Sometimes I make a very spicy red curry! But the one I made for you in this recipe is less spicy and full of fresh vegetables and spices :-). How to prepare:

Put the cauliflower (white parts) in a foodprocessor and process till you have the structure of nasi. You can also use a blender but this takes a bit longer. If you want to have quinoa instead of cauliflower, prepare
the quinoa according to whta’s on the package.
Cut the chicken into pieces. Heat up some coconut oil and bake the chicken. Cut the vegetables. I used pre cut pumpkin. Do you have a fresh pumpkin? Boil your pumpkin first for 15 minutes. Use a fork to check i
f the pumpkin is ready. Add the vegetables to the chicken. Save ¼ of a spring onion for later to top off your
dish. Add sambal, garam massala and lemon juice to your dish.
Leave it for 15 minutes until you start to get a sauce/curry.
Put your delicious curry on a plate with your cauliflowernasi/quinoa and top off with coriander and spring onion. Enjoy!

  • 200 gr of pumpkin
  • 150 gr of chicken
  • 200 gr of tomatoes
  • 2 spring onions
  • ½ yellow paprika
  • 150 gr of cauliflower or 75 grams of quinoa
  • 1 tbsp garam massala
  • 1 handful of coriander
  • ½ lemon (juice)
  • peper and salt
  • 1 ts sambal
Extras: foodprocessor
