Healthy curry
Nothing beats a good old spicy curry (a healthy version of course). I could eat curry every day and if they are as healthy as this one, I actually can! Yum! You know what I like most about curry? The fact that you can vary as much as you want. Sometimes I make a very spicy red curry! But the one I made for you in this recipe is less spicy and full of fresh vegetables and spices :-). Ingredients:
- 200 gr of pumpkin
- 150 gr of chicken
- 200 gr of tomatoes
- 2 spring onions
- ½ yellow paprika
- 150 gr of cauliflower or 75 grams of quinoa
- 1 tbsp garam massala
- 1 handful of coriander
- ½ lemon (juice)
- peper and salt
- 1 ts sambal
