Ginger bread cookies Parfait
Men how I love ginger bread cookies! It’s a typical Dutch treat we eat during this time of the year when ‘Sinterklaas’ is in town! But the original ginger bread cookies aren’t that healthy for you. And when you start eating them, you can’t stop! So I figured it was time to make a healty version of these goodies :) I decided to make a ginger bread cookies parfait, super jammy! You can eat this as a dessert as well! Snacking the healthy way, I love it!

How to prepare
Preheat the oven at 160 degrees.
In a bowl mix flours, honey, melted coconut oil, water, 1,5 tbsp mixed spice and salt. Mix till you get a dough.
Make little balls from the dough. You can make about 30 ginger bread cookies. Put them on a lined bakingsheet.
Bake the ginger bread cookies for 15 minutes in the oven. Every oven works differently so check your ginger bread cookies after 10 minutes. Let them cool well when they’re done.
Put 150 gr quark in a jar. Cover the quark with one layer of ginger bread cookies . Then another layer of quark. Finish off with left over ginger bread cookies and ½ tbsp. mixed spice.
Ingredients (3 portions)
- 250 gr low fat quark
- 50 gr almond flour
- 100 gr rye flour
- 50 gr honey
- 50 gr melted coconut oil
- 1,5 tbsp mixed spice
- 2 tbsp water
- Pinch of salt
