
Cinnamon crumble muffins
I often receive the questions if it’s allowed to eat bread when following my method. For most people it’s hard to skip the bread because they’re used to eat it every day. And I have to confess I love bread too! But there are so many healthy options to replace your sandwich with cheese. Look at these cute cinnamon crumble muffin for example! They are full of good nutrients and a perfect substitute for bread. Who would say no to these babies? Say bye bye to your sandwich ;-).

How to prepare
Preheat the oven at 170 degrees.
Mix almond flour, buckwheat flour, ginger powder, cinnamon and baking powder in a bowl. In separate bowl mix an egg, almond milk and coconut oil. Add this to the flour mixture and mix well.
Cut the figs and dark chocolate and add to the batter. If your batter is too dry, add some extra almond milk.
Pour the batter into 6 cupcake forms and bake in the oven for 25 minutes. For the topping mix almond flour with honey.
Let the muffins cool down and finish with the topping.

Ingredients (6 portions)
- 70 gr almond flour
- 70 gr buckwheat flour
- 1 tsp. ginger powder
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 75 ml unsweetened almond milk
- 1 tbsp. melted coconut oil
- 1 egg
- 3 figs
- 60 gr dark chocolate (85% or 90% cacao)
- Pinch of salt
Topping
- 3 tbsp. almond flour
- 2 tbsp. honey
