How to prepare
Preheat the oven at 175 degrees. Peal the pears and place in a medium saucepan. Cut the dates in pieces and add to the pears with the water, juice concentrate, cloves, cinnamon stick and honey. Let it simmer for about 2 hours. You can remove the skin but you can also leave it. If you’re watching your figure I would suggest to remove the skin ;-). For the marinade you mix the olive oil and seasoning. Rub this mixture on the outside of the chicken. Bake the chicken in the oven for 1,5 hours. Every oven works differently so you should check the chicken after 1,5 hours if it’s done. If not, then put bake in the oven for 15 minutes or so. Peal the sweet potato and cook until done in 15 minutes. Mash the potato with the almond milk, nutmeg and pepper and salt. You can add some dairy butter if you like. Cut the veggies lengthwise and rub them with oil. Grill the veggies on both sides until done. Season with pepper and salt.Ingredients (6 persons)

- 4 tbsp. olive oil
- 2 tsp. garlic powder
- 2 tsp. paprika powder
- 1 tsp. curry powder
- Pepper and salt
- 1 paprika
- 1 zucchini
- 2 carrots
- 1 big sweet potato
- 50 ml almond milk
- 1 tsp. nutmeg
- Pepper and salt
- Optional: dairy butter
- 1 kilo ripe pears
- 4 cloves
- 2 dates
- 100 ml water
- 100 ml unsweetened juice concentrate
- 1 cinnamon stick
- 1 tbsp. honey
