Raspberry jam cookies
Yes ladies even I crave for something sweet every once in a while. When I feel like having something sweet I make these delicious raspberry jam cookies. Oh my they are so good! What’s not to like? I love these easy and healthy snacks that satisfy my sweet tooth.
I can hardly believe that these are actually good for you! Eating healthy can be so delicious girls!

How to prepare
Preheat the oven at 180 degrees.
For the filling: mix raspberries and water in a blender. Add chiaseeds and give it a stir. You can add some stevia drops if you want but first give it a taste before you add stevia. Put the jam in the fridge for at least 1 hour.
For the cookies: mix spelt flour, oatmeal flakes, baking powder and salt in a bowl. Cut the dates into little pieces and add to the bowl. In another bowl mix coconut oil, water and vanilla extract and add to the flour mixture. Line up a baking sheet with parchment paper. Make cookies of 1 cm with your hands and place on the baking sheet. Bake the cookies for 30 minutes.
Let the cookies cool down before you fill them with the raspberry jam.
Ingredients (2 portions)
- 75 gr spelt flour
- 25 gr oatmeal flakes
- 2 dates
- 2 tbsp. melted coconut oil
- 100 ml water
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- Pinch of salt
Filling
- 1 hand of raspberries (frozen)
- 1 tbsp. water
- 1,5 tbsp. chiaseeds
- Optional: 2 stevia drops
